Activate the Yeast:

  1. In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for 10 minutes until frothy.

Prepare the Dough:

  1. In a large mixing bowl or stand mixer fitted with a dough hook, combine flour, remaining sugar, and salt.
  2. Add the yeast mixture, eggs, egg yolk, softened butter, vanilla extract, and lemon and orange zest.
  3. Mix on low speed until combined, then increase to medium and knead for 10 minutes until the dough is smooth and elastic.

Incorporate Fruits and Nuts:

  1. Add candied fruits, raisins, chopped almonds, and dark chocolate (if using). Knead the dough until the fruits and nuts are evenly distributed.

First Rise:

  1. Place the dough in a lightly greased bowl, cover with plastic wrap, and let it rise in a warm place for 2 hours, or until doubled in size.

Shape and Second Rise:

  1. Punch down the dough and transfer it to a Panettone mold or a large, deep cake pan lined with parchment paper.
  2. Shape the dough into a round loaf and make a cross-shaped cut on top.
