Activate the Yeast:

Prepare the Dough:

In a large mixing bowl or stand mixer fitted with a dough hook, combine flour, remaining sugar, and salt.

Add the yeast mixture, eggs, egg yolk, softened butter, vanilla extract, and lemon and orange zest.

Mix on low speed until combined, then increase to medium and knead for 10 minutes until the dough is smooth and elastic.
Incorporate Fruits and Nuts:

Add candied fruits, raisins, chopped almonds, and dark chocolate (if using). Knead the dough until the fruits and nuts are evenly distributed.
First Rise:
